Last week I made followed this recipe to make Baked Chicken Parmesan. Oh boy, it was delish and quick & easy- - the best kind of recipe! I was hoping to make it the night before, but ended up running out of time (ah, who woulda thunk it!), but making it the day of was still fast!
Baked Chicken Parmasan (via IowaGirlEats)
Ingredients:
- 5 chicken tenders
- 1 jar spaghetti sauce
- 1/4 cup Parmesan cheese
- 1/2 teaspoon dried basil
- 1 cup Mozzarella cheese
- 2 servings cooked pasta (we did a his and her version)
Directions:
Preheat over 400 degrees.
1. Pour sauce into an oven safe baking dish. Add parm cheese and basil, and mix.
Just a side note-- hbf and I love this sauce! I don't know what it is-- but I have got him hooked on spicy foods and this sauce is perfect! It's zesty and spicy. I wasn't sure how it would pair well with chicken but after the meal, decided it would pair well with anything!
2. Season chicken with salt and pepper, and then lay into sauce mixture and cover with sauce.
3. Top with mozzarella cheese and cover with foil. Bake for 20 minutes. Remove foil and bake for 10 more minutes, until chicken is fully cooked.
4. While chicken is baking, cook up some pasta.
We did a his&her; combo pasta. Normally, hbf likes penne but I was feeling in the mood to swirl up some noodles - so we opted to do both!

I cooked them in the same pot. Kinda a hassle when I drained it, and had to separate all the noodles :razz:
The meal came out looking pretty delicious. Take a look at our his and her portions (hehe)
To be fair, hbf has some leftovers that I took with me to work for lunch the next day so he didn't eat that massive pile of noodles. But I bet if he was hungry enough he would have! This is definitly going into our "make again" pile.
In other news, I cannot believe it is already Feburary. Boy, am I pumped! I love this month! Why? For many reasons! A) Valentine's Day -- gotta love a holiday all about kisses, love and pretty hearts. B) It's only 28 day days long so it's not very long at all. and C) February means its close to March, which means is almost April... then May. So February means its almost SUMMER! (not really, but work with me here).
