Bad Case of the Mondays


Sausage-Veggie Soup


Turkey kielbasa, sliced
1 1/2 cups frozen corn
2 cups chicken broth
1 cup water
2 cups spinach
1/2 small onion, chopped
1 cup broccoli florets
1 cup sliced carrots

1. In a pot, slightly crisp up the turkey kielbasa slices and onions.
2. Pour in chicken broth and water, add frozen corn, broccoli and carrots. Let simmer for 10 minutes.
3. Before serving, add spinach leaves.
4. Salt and pepper to taste.





So yesterday, I was having a serious case of the Mondays.  Helloboyfriend and I just got home from a weekend up north which meant a weekend of greasy food, no workouts and a mixed up sleeping schedule. My body was in no mood for Monday. So when I went grocery shopping after work and the gym, the only thing I wanted was soup. This little medley I created over the summer and is a plethora of different veggies that I already have but it always has the same base-- chicken broth, corn and turkey kielbasa. Then I just throw in other things I have around the apartment  and TA DA-- soup is served.

Definitely made me feel alot better and it felt really good to eat real, home cooked food again. I swear hbf and I hit up every fast food chain in three days. I know we really didn't, but it sure felt like it. gross. That kid has a love for fast food (and definitely has the metabolism to support it... I, on the other hand, do not!) But even he was excited to eat real food again, woopieee.

I also need to play some serious catch up. My google reader is (again) over 1,000 and I haven't blogged in a week. Speaking of weeks, here is our menu for this week. I have been bad at sticking to my menus so fingers crossed this weekend sticks!

Monday: Sausage-Veggie soup
Tuesday: Grilled salmon, wild rice and broccoli
Wednesday: Chicken and spinach-artichoke casserole
Thursday: Spaghetti night!
Friday:  Pork chops and potatoes

As much as I love my grill pan-- I cannot WAIT to get outside and grill again. Spring gave us a sneak peek this weekend but I know April showers are coming first and I'm ready for 'em! Umbrella UP. Bring it on, April :)
